How to Make Homemade Passata di Pomodoro Soup
Passata di Pomodoro Soup is an excellent, simple recipe to make in the cold seasons. Serve with toasted focaccia brushed with burro-aglio (butter-garlic) and a glass of red wine.
- 1kg Mature Tomatoes
- 2 Green Onions, Sliced
- Handful of Basil
- Extra Virgin Olive Oil
- Salt and Pepper
STEP 1: Wash and slice the tomatoes in half, transfer to a saucepan over medium-low heat and add half of the sliced onion, then let it simmer for half an hour. Then pass the mixture through with a strainer to remove seeds, then set mixture aside in a bowl. Clean out saucepan.
STEP 2: Heat the now clean saucepan over medium heat, add olive oil and the remaining green onion for 5-7 minutes. Then pour in the smooth tomato puree, add in the basil, and season with salt and pepper. Let sauce thicken without a lid on over low heat for about 60 minutes. Buon Appetito!
