Old Cabbage Salad
This Old Cabbage Salad dish is something you can find only at Eloro District. This kind of Cabbage was near to extinction. Very traditional in the past. It was often planted close to the house and used to draw the boundary lines of farms. This Cabbage has more nutritional properties normal cabbage (Brassica oleracea). It is a wild varietal—it’s very flavor intense and doesn’t flower, so you can eat leaves. We share a very simple salad with winter fresh products you can find in this District.
Special Thanks To: Brassicari Rosolinesi Organization for taking care of this ancient cabbage variety with the help of the Slow Food Movement.
