Old Cabbage Salad
This Old Cabbage Salad dish is something you can find only at Eloro District. This kind of Cabbage was near to extinction. Very traditional in the past. It was often planted close to the house and used to draw the boundary lines of farms. This Cabbage has more nutritional properties normal cabbage (Brassica oleracea). It is a wild varietal—it’s very flavor intense and doesn’t flower, so you can eat leaves. We share a very simple salad with winter fresh products you can find in this District.

INGREDIENTS
- 500gr of Wild Cabbage Leaves
- 2 Organic Lemons, Juiced
- 1/4 teaspoon Salt
- Extra Virgin Olive Oil
PREPARATION
Step 1: Wash the cabbage. Then, with a pairing knife, cut the leaves thinly and place in a large serving bowl. Add in the lemon juice and the salt. Wait for 1-2 hours.
Step 2: Once the time is up, add in some extra virgin olive oil and serve immediately. Buon Appetito!
