Orange Pesto is very fresh and light side dish. You can use also with Pasta or Bruschetta. It’s very easy to prepare— just good quality ingredients and a blender. That’s it.

- 2 Organic Oranges
- 1 Organic Lemon
- 1 clove of garlic
- 40 gr of salted Capers
- 100 gr of Almonds
- 150 gr Parmigiano
- Herbs (Thyme or Basil or Parsley or Marjoram)
- Black Pepper
- Red Chili Peppers
Step 1: Start by grating the oranges and lemon in to a bowl, then put aside. After peeling the oranges, remove the only orange skin without the white (it is characteristically bitter)
Step 2: Then remove the seeds from the citrus, and place all of the ingredients into a food processor until smooth, but still chunky enough to show ingredient integrity. Stir into al dente pasta or serve on warm toasted bread with drizzled EVOO and a glass of bright white wine. Buon Appetito!
