500g ricotta cheese
450 gr homemade pasta
4 tablespoons extra virgin olive oil
Put on the flame a pot of water to cook the pasta, salt the water and wait for it to boil. Meanwhile start the preparation of the pasta sauce: Put the ricotta in a bowl and mash with a fork until it is reduced to a cream,
Add salt, oil, pepper and continue to stir to combine ingredients.
Cook the homemade pasta and just before the end of cooking add the ricotta then add a ladle of the cooking water to make it softer.
Drain the pasta, taking care to keep aside the cooking water in case the dough is a bit ‘dry, and add it to the ricotta. Mix well the fusilli with ricotta cream and serve immediately.
