600 ml of warm water
1 kg of flour (preferably hard wheat)
1 packet of yeast
2 teaspoons sugar
5 tablespoons of extra virgin olive oil
To prepare the dough for the pizza, place the flour on a pastry board (or in a large bowl) and make a hole in the center.
Take a cup and a glass of warm water, crumble into the cube of yeast and sugar.
Stir and melt well and placed at the center of the flour the mixture of water and yeast.
Now, dissolve the salt in another glass of warm water; Add the olive oil and place it in the flour.
Keep a bit ‘of flour close incase you need to add more and the remaining warm water, which will integrate in the mixture gradually, until it reaches the desired consistency, which must be soft and elastic.
Continue to knead until the dough is smooth and soft but firm, with which you will form a ball that you are going to lay in a large bowl, properly dusted with flour on the bottom.
Cover the bowl with a clean cloth and place it in a warm place and away from drafts.
Wait until the dough has doubled in size (it will take 1 hour – 1 hour and a half) and then proceed to the drafting of the pizza dough.
