A Traditional Sicilian Calzone
Maybe the expression Calzone is not correct for this kind of pizza. Just to know, Calzone is a Napoli pizza made turning a normal pizza. Different procedure for a typically closed pizza made in Sicily southeast. At first, different kind of flower, usually all Sicilian Typical Recipes have a base made by Semola di Grano Duro.
What Vota Vota is? The name came from the way to do it. When the dough is ready rolled out. You put the ingredients on the center and then close making a sort of closed box. For doing this you have to “turn” Sicilian way to say is “Votare”, for this Vota Vota.
600gr flour (use durum wheat flour)
0,3 lt of water
1 gr yeast
1 little spoon salt
1 spoon extra virgin olive oil
tomato sauce, tuna, and spring onion
tomato sauce and parsley
Adding warm water to the flour with the yeast, then start to mix with hands for some minutes till the dough became compact, after that, cover the dough and wait 12 hours.
After, roll out the dough and put in the middle what you prepared before. Cover “Vota” like in the pictures and just a spoon of extra virgin olive oil on the top smeared by hand.
In the oven at 200° for 20 minutes
